Cilantro Lime Chicken 

Cilantro Lime Chicken with Mango Salsa & Cilantro Rice

Ingredients for the
CHICKEN
Chicken breast
1 lime
1 tbsp avocado oil
1/4 cup cilantro chopped
1 tbsp salt
1 tbsp pepper
Ingredients for the
SALSA
1 ripe mango
2 large tomatoes
1/4 cup diced red onion 
1 jalapeno
2 tbsp agave
1/4 cup cilantro chopped
1 lime to taste
salt to taste
Ingredients for the
RICE
1 cup dry jasmine rice
2 cups chicken bone broth
1 lime & lime zest
1 tbsp chopped cilantro
1/4 cup cilantro chopped
INSTRUCTIONS:
1. Slice the chicken in half if they are thicker before marinating. This allows the chicken to soak up all the flavors and cook evenly.

2. Add in your oil, cilantro, lime juice, salt and pepper to a boil or bag with your chicken. Cover for 15-30 minutes.

3. Get your small pot on the stove at about medium heat and add in your 1 cup of rice with 1 tbsp oil. Let this heat up for about 1-2 minutes while stirring. DO NOT LET THIS BURN. Add in your 2 cups chicken bone broth and bring to a small boil. Turn down to a simmer and let cook covered for about 12:00 minutes.

3. While your chicken is marinating and your rice is cooking, gather your ingredients for your salsa. Chop everything and add to a bowl and set aside.

4. Heat your grill to high heat on one side and medium heat on the other side. If you do not have a grill you can preheat a skillet to medium.

5. Place chicken on the grill for about 5 minutes on each side. If you have a meat thermometer, check each chicken breast to see if internal temperature has reached 165 degrees F. Remove from the grill.

6. Check your rice. Add in 1/2 lime juice and some zest. Add in 3 tbsp cilantro. Stir.

7. Plate your rice then chicken adding the salsa on top. ENJOY!

1/2 cup rice
1/4 cup salsa
